Gastronomy and mixology with lavender: celebrate World Agriculture Day at Aires de Lavanda

Gastronomía y mixología con lavanda: celebra el Día Mundial de la Agricultura en Aires de Lavanda

Introduction

Lavender not only perfumes our fields: it's also a surprising ally in the kitchen and at the bar. Taking advantage of the fact that September 9th is World Agriculture Day, we're dedicating this month to exploring how this noble plant flavors recipes, cocktails, and desserts. At Aires de Lavanda, in the heart of the Guadalupe Valley, we grow our own plants and transform them into sensory experiences and artisanal products. Join us as we discover how gastronomy and mixology are inspired by lavender to pay tribute to those who work the land and provide us with quality food.

The Culinary Art of Lavender

Although lavender is primarily grown for its essential oil in perfumes and cosmetics, certain varieties, such as English lavender (Lavandula angustifolia), have a sweet scent with citrus notes that make them perfect for cooking. The buds are used fresh or dried in pasta, salads, dressings, and desserts, and the dried buds are used to flavor sugar, breads, and beverages. Monofloral lavender honey is highly prized because the flowers produce abundant nectar. The key is to use small amounts, as the flavors are intense; a touch is enough to turn a recipe into an aromatic experience.

Aromatic experiences at Aires de Lavanda

In our lavender field, culinary experiences and lavender mixology take center stage. On weekends, we offer a mixology bar where our bartenders prepare lavender-infused cocktails, as well as artisanal gelatos and pizzas. You can also enjoy a craft beer tasting—where you'll try four labels, including a lavender stout—or a wine tasting with three Rondo del Valle labels (white, rosé, and red). The guided tour of the field includes an explanation of the plant's dehydration and distillation, and the creation of bouquets and sachets. If you prefer a more comprehensive experience, book a picnic among lavender or a workshop where you can prepare your own cosmetics and oils. Remember that these experiences include admission and a tour and must be reserved 24 hours in advance. Our field is open Saturdays and Sundays from 11:00 a.m. to 7:00 p.m.

Global inspiration and celebrations

The culinary use of lavender has roots in Mediterranean cuisine. In Provence, it's part of the Herbes de Provence (herbs of Provence) and seasons meats and breads; in the United Kingdom, it's used in scones and cookies; in Italy, it's infused into oils and liqueurs. For even more inspiration, check out the Brihuega Lavender Festival in Spain, where concerts and dinners are held outdoors among lavender fields. Organizers recommend arriving early and accessing only via road CM-2005 to avoid detours. Festivals like these remind us that lavender is a symbol of community, gastronomy, and culture.
